I have never been one for salad, but the minute you add some strawberries, I might get on board if there’s a tasty dressing involved. So in honor of summer solstice today we have a great salad to use up all those berries you impulsively bought at the market this week because they looked so good, and well, they do just scream, SUMMER! Okay, only you Funs (SPs), and Smart Freedoms (NTPs) and Organic Freedoms (NFPs) bought those berries without a plan, but for the rest of you Classics (SJs), Organic Structures (NFJs) and Smart Structures (NTJs), this easy recipe from Martha’s Whole Living is worth a trip to the market, the grocery, or the freezer.

Four-Berry Salad

  • 1 tablespoon balsamic vinegar
  • 2 teaspoons light-brown sugar
  • 1 1/2 cups strawberries, hulled and halved, or quartered if large
  • 1 cup blueberries
  • 3/4 cup raspberries
  • 1/2 cup blackberries
  • 2 tablespoons small mint leaves
  • 1/4 cup toasted walnuts or pecans, coarsely chopped (optional)

In a medium bowl, whisk together vinegar and sugar.

Add strawberries, blueberries, raspberries, blackberries, and mint. Toss to combine. Transfer to serving bowls and sprinkle nuts over top if desired.
