BLT To Go
With two healthy recipes under our belts this week, I thought I’d feature one that is more of a treat. If you’re some insane Classic calorie counter like myself, perhaps save it for that big workout day or if you’re more laid back, go ahead and treat yourself or your little one to a nice packed lunch. This recipe is quick, easy and portable.
I got this recipe from recipes.kaboose.com. It’s essentially your average BLT made more transportable in a wrap. I never would’ve thought of this because to me, BLTs go on toast and that would get soggy in transport. Talk about having difficulty thinking outside of the box! There are probably dozens of Smarts, Organics and maybe a few Funs saying “Duh” right now. Look, Classics may not be the world’s best brainstormers but we are amazing implementers and I tweaked the BLT recipe to make it simpler.
BLT Wraps
Time to prepare: 20 minutes
Ingredients
4 strips thick sliced bacon, cut into 1 inch pieces — I don’t know if this second step is necessary if you follow my cooking instructions below.
1 (12 inch) flour tortilla
1/4 cup shredded Cheddar cheese — or substitute avocado as in photo for a slightly healthier take.
1/8 head iceberg lettuce, shredded
1/4 tomato, diced
Directions
Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside. Now, here’s my two cents. Cooking bacon in the microwave is WAY easier and less messy. Depending on the intensity of the microwave, I usually give about a minute per strip, or just follow the instructions on the package. You place a paper towel on a microwave safe dish, then place the strips, then a paper towel over it, pop it in the microwave. It comes out crispy so this isn’t for anyone who loves their bacon chewy. But trust me, you’ll appreciate the ease. Place 1 tortilla on a microwave-safe plate — if you’re going the cheddar route. Sprinkle tortilla with 1/4 cup cheese. Cook in microwave 1 to 2 minutes, or until cheese is melted. Immediately top with 1/4 of the bacon, lettuce, and tomato. Fold sides of tortilla over, then roll up. Cut wrap in half before serving.
