The key to this competition blasting guacamole recipe is that it does NOT include raw garlic. Guacamole is a party dish and feeding your guests raw garlic is a sure way to make them feel completely insecure, as they should.

The other key is a lot of fresh lime juice or lemon juice in a pinch. Also, EVERYTHING in guacamole is optional so if you dont like cilantro, dont add it, if you like it spicy, add more jalapenos! Do what you want!  (just dont add raw garlic…)

4 ripe delish avocados
juice of 4 limes
handful of chopped cilantro
1 whole jalapeno, deseeded and minced
2 -3 tablespoons hot green salsa (only if you have it)

In a mixing bowl, scoop out avocados. Add the juice from the limes one lime at a time, mixing and tasting after the addition of each lime. Do not over mash avocados – they should still have plenty of good texture.  Once you can really taste the lime juice but before it overwhelms the avocados, add half the cilantro, the jalapeno, salsa, salt and pepper and give it all a good stir. Taste it and add more of whatever you’d like to taste more of. But the key is to go in stages, you can always add more but you cant take away. Garnish with a little cilantro and serve with tortilla chips! 

Katie says make it a meal by serving it with leftover turkey chili! This is actually something Becca served us on a fateful Brown Sunday afternoon this fall. Delish! Or, use some of the leftover bread from earlier in the week, toast it up and spread the guacamole and top off with shaved ham, or salami, or some other kind of yummy deli meat, and then sprinkle on some cheese and zap in the microwave or toaster oven for openfaced sandwhiches. Works equally well with little pieces of sliced French bread or with big slices.
