Cooking for Idiots, Instant Chocolate Pudding
Okay, you might think, “Really? Pudding?? Really?” Yes, seriously folks, it’s good. When I was still working in finance, the last thing I ever wanted to do when I came home at night was cook, let alone make myself dessert. But, this homemade dessert is so easy and quick that even an exhausted single equity analyst (or harried mom) can do it.
First, all you need is a blender, instant pudding mix (I like Kraft’s Jell-O) and then some milk. I timed it from the moment I reached into the cupboard to grab the box until it was ready to go in mini ramekins. 5 minutes. I think it takes me that long to get cookies on a plate sometimes. And, if you’re watching your waist, you can get the sugar free version.
It takes ages for pudding mix to go bad so you can stock up on it and have a gourmet treat at your fingertips or whip it out to impress guests (seriously, a little whip cream, blended with vanilla and sugar can go along way). I tried the Devil’s food version of the regular instant pudding and would not recommend unless you smother it in whipped cream, which kinda defeats the point of a nice, light dessert. I am excited to try the vanilla version once I slog through the Devil’s food. Whoever came up with “waste not, want not” was definitely a guilt ridden Classic like myself.
