Chocolate Chip Pancakes That Are Good for You

Whenever I see Gluten Free, I immediately think, “Yuck, must be devoid of taste” but Katie says the exact opposite for these gluten free chocolate chip pancakes. Now, admittedly, I don’t know if they’re good for you like a glass of red wine might be. But, Kate said this delicious recipe eliminated the high/low we all sometimes feel when scarfing down one or two stacks of hotcakes. She got the recipe from a friend out in Seattle and swears by them (and we all know if they sucked, Katie would tell it like it is).

Now as a practical Classic, I’m not likely to make these on a weekday morning but every once in a while on a Saturday, I could envision me making pancakes from scratch. Maybe … truthfully what I’m more likely to make, given my predilection for expedience over taste, is Aunt Jemima pancake mix. When I was my friend Elizabeth’s wedding shower this weekend, her sister gave her a griddle, Aunt Jemima pancake mix and said “All you need to so is add water.” Beyond brilliant. Thank you Elizabeth’s sister Maria for alerting me to these easy pancakes in a box AND mega brand food companies for creating such simplicity!

Okay, back to pretending I’m actually gourmet … I’m betting you could also put bananas in this one. Oh man the first time I had banana pancakes, I fell in love. My best friend’s husband George made them for us complete with peanut butter and syrup, ohohoho. All the Funs out there, I’m betting you could tweak this recipe a zillion ways to Sunday. Anybody could do this recipe but it’s the types that don’t obsess over time and efficiency that will likely make pancakes from scratch most frequently.

Okay. Katie has never understood why exactly people use a pancake mix. It’s just flour and baking powder. Seriously?! Are we that lazy? And to be honest, I’ve tried the gluten-free pancake mix and it’s always a bit too dry. Although the chocolate chips do help. What Megan and Mark do is mix up the flour mix ahead of time and we suggest you do too.

Little Ireland’s Perfect Pancakes (Or Megan & Mark’s B&B Mother’s Day special)

(A lot of prep for an amazing payout.)

Ahead of time, make the flour:
Magic Flour Mix (Makes 6+ cups):

  •  3 1/2 cups White rice flour
  •  2 1/2 cups tapioca flour
  •  2 tablespoons of Xantham gum
  •  2 (7 gram) packets of unflavored Gelatin
  •  2 Tablespoons of egg replacer
  •  1/4 cup of white Sugar

Then
use 5 cups of the Magic Flour Mix above (keeping the rest in the pantry)

  • 2 tsp Xantham gum
  • 1 cup Almond meal
  • 4 tsp Egg Replacer
  • 3 rounded Tablespoons baking powder
  • 2 tsp salt
  • 3/4 cup brown sugar
  • 1 cup shortening: I use Spectrum organic non-hydrogenated brand (CRISCO if you have to)

Then store this mix in the fridge for when you want to make pancakes.

 

To make the pancakes:

  • 1 3/4 cups of flour mix
  • 2 Eggs
  • 2 Handfulls of chocolate chips
  • 3/4 cup of milk
  • 1/2 cup of water

Beat eggs into the water and milk.  Beat in flour mixture until mixed together. Do not beat smooth. Add about two handfuls of chocolate chips. Cook on a hot griddle. Serve with Irish butter and maple syrup.
